while selecting text it isn’t as multiple even the multiple checkbox is unavailable in the text format selection while in html and links it is presented look for the screenshots for refence
This was removed intentionally because users were incorrectly using text selector. Use Element selector instead to select multiple elements and then add the text selector as a child selector. Or use multiple type in text selector
